Cheese Muffins
2 cups flour
4 teaspoons baking powder
½ teaspoon salt
¼ cup oil
1 egg
1 ¼ cups milk
1 generous cup (a good handful) of grated cheese
Preheat oven to 200°C. Spray a tray of 12 muffin tins with non stick baking spray.
Mix all ingredients in a large bowl until just blended
together (don’t over work the mixture or the muffins will be too tough and
chewy). Spoon into prepared muffin tins. Bake for about 15 - 20 minutes until
golden brown. Cool muffins on a wire rack. These can be eaten plain or filled
like little bread rolls for a great lunch idea.Tip: For a lovely shiny cheesy
topping, place a few shreds of grated cheese on the surface of each muffin
before baking. A few extra tablespoons will be sufficient for the 12 muffins.
